Gluten-free Rice Flour
With the growing awareness of Celiac disease, we are ideally positioned to provide products suitable for individuals on wheat, rye, oat, and barley gluten-free diets. Our facilities are dedicated exclusively to the production of rice products. As the oldest, continuously family-owned and operated rice farm and mill in all of California, we oversee all facets of production on the Koda family farm. This encompasses all stages of growing and harvesting of our specialty rice strains, to milling and packaging of our long-established trademarked products.
In Celiac Sprue support circles, the wide-spread usage of the term “Mochiko” to refer to sweet rice flour can be directly linked to our trademarked Blue Star Brand Mochiko, as we were the first to introduce sweet rice flour to the American market in the late 1940s. Blue Star Brand Mochiko is produced from start to finish on our farm - from the growing and harvesting of our short grain rice, to the milling and grinding of pure, unadulterated kernels. Blue Star Brand Mochiko Rice Flour is naturally gluten-free. Additionally, for over 40 years, we have produced rice flour milled from our proprietary, heirloom variety of medium grain rice. This gluten-free flour is widely available to the food service trade under our trademark, Diamond K Rice Flour, and to individual consumers at the retail level under our trademark, Kokuho Rose Premium Rice Flour. Kokuho Rose Premium Rice Flour is also available in a limited production, all-natural, Organic version. |
