Rice in various types and forms

Medium Grain Rice
Individual kernels of Medium Grain rice are approximately two to three times longer than their width. Raw kernels are white and translucent in appearance. Cooked medium grain rice is moist and tender in texture. Grains cling to each other after cooking.
 Sweet Rice / “Sticky Rice”
Individual kernels of Sweet rice are plump and short in length. Raw kernels are chalky white and opaque in appearance. Sweet rice becomes very sticky when cooked. This unique characteristic is desirable for many specialty main dishes and deserts. Sweet Rice is sometimes referred to as “Glutinous Rice.”
Rice Flour
Rice flour is ground from “broken” and or “second head” rice. Rice flour is a popular wheat flour substitute since it is gluten-free.
 Paddy Rice / Rough Rice
Rice kernels that have their hulls intact are referred to as Rough or Paddy rice. Before rice can be consumed, this tough outer hull or husk must be removed
through milling.
Brown Rice
Rice kernels without their hulls. The coloring of brown rice is
due to the nutritionally rich layer
of bran. Brown rice may be consumed as is or processed
into milled white rice. Cooked brown rice has a chewy texture
and a subtle nutty flavor.
 Rice Bran
The outermost layer of brown rice is known as bran. Bran is a rich source of fiber, iron, magnesium, niacin, potassium, thiamin, and vitamin B-6, iron.
Rice Hull
The outer covering of the rice kernel is referred to as the hull or husk. Hulls are a useful byproduct of rice milling and commonly used as bedding in animal husbandry, fuel in co-generation energy plants, and composting material for gardening.
